Madie and I always love baking together and she loves going to the Markets as well. The owners and employees are even starting to recognize us. I have been patiently waiting for Blueberry and Peach season. We served this at Madie’s Baptism dinner two years ago and I have been wanting to make it again ever since. I think it may be one of my all time favorite desserts.
First prepare your peaches. 2 – 3 peaches peeled, pitted and sliced. Add in 3/4 C White Sugar, 3/4 C Brown sugar, 1/4 C Honey, Pinch of Salt, 1 t Cinnamon, 1/2 t Nutmeg, 1 t Lime Zest, 1/2 t Lime Juice. Simmer on medium heat for Five Minutes. Remove from Heat and Add in 2 Cups Fresh Blueberries. (I didn’t add in any Cornstarch, I like Juicy Cobbler and I was using fresh fruits that were perfectly ripe) If you would like you can always add Cornstarch in to make your cobbler thicker.
For the Cobbler crust that actually rises to the top. Melt one stick of butter in your baking dish. Meanwhile mix together 1 C Flour with 1/2 T Baking Powder and 1/2 t Salt. Then Mix in 1 C Sugar. Sift dry ingredients together and then stir in 1 C Buttermilk and 1/2 T Vanilla. Mix the Cobbler Batter together and pour into baking dish over the melted butter. No need to mix the two together.
Next Pour your Fresh Fruit Mix into the Cobbler. Bake all together at 350 Degrees for approximately 40 Minutes until all your cobbler dough is cooked and the top is golden brown. If you are worried just lift a piece of the Cobbler topping up with a spoon and look at the bottom of it. You can see if it is cooked or not and you can gently place it right back down in the cobbler without even disrupting the appearance of the cobbler.
Top with Homemade Lime Whipped Cream. Whip 1 C (Half Pint) of Heavy Whipping Cream with a pinch of salt to stiff peaks. Next, add in 3/4 C sifted powdered sugar, 1 t Lime Juice, 1 t Vanilla, and 1/2 T Lime Zest.
