My Homemade Zucchini Pepper Relish was the inspiration behind these smoked Burgers. My thoughts…why not fry green tomatoes with a corn meal breading to keep a southern feel to compliment the relish then throw some mild and creamy Dill Havarti Cheese on top. It all worked so well together on a simple Sesame Seed Bun. I also made a Cajun Celery Root Remoulade to serve with the Fried Green Tomatoes. Almost like a Complimentary Slaw to the Tomatoes.
For Dessert we kept it real light since the rest of the Meal is so filling. Grilled Peaches topped with Cottage Cheese and Orange Ginger Baked Granola. These were Delicious and can be served for breakfast or a light lunch as well. Madie and I also eat the Orange Ginger Granola on top of Greek Yogurt and Berries or sprinkle it on top of Peanut Butter and Banana 15 Grain Toast. It’s also good on Fruit and Nut Salads for a little added crunch. We had fun with this Menu and the Burgers were Awesome we will definitely make all of this again!
