Chilled Quinoa Salad

Super Nutritious Quinoa loaded with Tons of Healthy Fruit, Nuts and Veggies

Create your own fantastic version.  First, start with the Quinoa.  Mix and Match or buy the Rainbow Variety.  Cook, Chill and add in your fruits.  I like to use grapes, mandarin oranges and then a firm fruit like apple, pear or Asian pear.  You can also add dried fruits such as raisins or cranberries.  I put vegetables in mine.  Usually celery, red onion and cucumbers.  Nuts also give it texture.  Almonds, pumpkin seeds or sunflower kernels are good options.  You can add additional protein too like feta cheese, diced white meat chicken or even sauteed shrimp.  The possibilities are as endless as are the ways to enjoy this salad.  Serve it by itself or with crackers for a quick snack.  Serve it on a bed of greens or arugula tossed in lime vinaigrette or stuff an avocado or cantaloupe half with it.  Serve it with big leafy greens or bibb lettuce for lettuce wraps.  Fill a pita pocket with the quinoa salad and grilled chicken.  It also makes a great side dish to chicken, seafood, lamb and turkey. 

Quinoa, considered a super food, is loaded with protein and fiber,  not to mention essential amino acids, omega 3’s, iron and potassium.  Here we are taking an already wonderful base and elevating in even further with additional diverse nutrients.  And it’s Delicious!
